Ingredients

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup durian flesh, mashed
  • 1/2 cup coconut milk
  • 3 eggs
  • 1/2 cup unsalted butter, melted

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a large bowl, combine the all-purpose flour, sugar, baking powder, and salt.
  3. In another bowl, mix the mashed durian flesh, coconut milk, eggs, and melted butter.
  4. Gently fold the wet ingredients into the dry ingredients until just combined.
  5. Pour the batter into the prepared cake pan and smooth the top.
  6. Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  8. Slice and serve the durian cake at room temperature.
