- 2 cups all-purpose flour
- 1 cup sugar
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup durian flesh, mashed
- 1/2 cup coconut milk
- 3 eggs
- 1/2 cup unsalted butter, melted
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
- In a large bowl, combine the all-purpose flour, sugar, baking powder, and salt.
- In another bowl, mix the mashed durian flesh, coconut milk, eggs, and melted butter.
- Gently fold the wet ingredients into the dry ingredients until just combined.
- Pour the batter into the prepared cake pan and smooth the top.
- Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- Slice and serve the durian cake at room temperature.
