- 1 cup all-purpose flour

Instructions
- Preheat the oven to 375°F (190°C). Grease a 12-cup muffin tin.
- In a large bowl, whisk together the flour, granulated sugar, salt, cinnamon, and nutmeg.
- In a separate bowl, whisk together the milk, eggs, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- In a skillet, melt the butter over medium heat. Add the diced apples and brown sugar. Cook for 5-7 minutes, or until the apples are tender.
- Gently fold the cooked apples into the muffin batter.
- Divide the batter evenly among the prepared muffin cups.
- Bake for 18-20 minutes, or until the muffins are puffed and golden brown.
- Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
