Ingredients
- 1 cup heavy cream
- 4 ounces bittersweet chocolate, chopped
- 2 tablespoons unsalted butter
- 2 large eggs, separated
- 2 tablespoons granulated sugar
- 1 teaspoon vanilla extract
Instructions
- In a small saucepan, heat the heavy cream over medium heat until it begins to simmer.
- Remove the cream from the heat and add the chopped chocolate and butter. Stir until smooth and well combined.
- In a medium bowl, whisk the egg yolks with the granulated sugar until pale and thick. Stir in the vanilla extract.
- Gradually pour the chocolate mixture into the egg yolk mixture, stirring constantly.
- In a separate bowl, beat the egg whites until stiff peaks form. Gently fold the egg whites into the chocolate mixture until no streaks remain.
- Divide the mousse among serving dishes and refrigerate for at least 2 hours before serving.
