Dutch Chocolate Mousse

Ingredients

  • 1 cup heavy cream
  • 4 ounces bittersweet chocolate, chopped
  • 2 tablespoons unsalted butter
  • 2 large eggs, separated
  • 2 tablespoons granulated sugar
  • 1 teaspoon vanilla extract

Instructions

  1. In a small saucepan, heat the heavy cream over medium heat until it begins to simmer.
  2. Remove the cream from the heat and add the chopped chocolate and butter. Stir until smooth and well combined.
  3. In a medium bowl, whisk the egg yolks with the granulated sugar until pale and thick. Stir in the vanilla extract.
  4. Gradually pour the chocolate mixture into the egg yolk mixture, stirring constantly.
  5. In a separate bowl, beat the egg whites until stiff peaks form. Gently fold the egg whites into the chocolate mixture until no streaks remain.
  6. Divide the mousse among serving dishes and refrigerate for at least 2 hours before serving.
