Dutch Pancake Pizzas

Ingredients
- 1 cup all-purpose flour
- 1 1/2 cups milk
- 2 eggs
- 1/4 teaspoon salt
- 1/4 cup butter
- 1 cup marinara sauce
- 1 1/2 cups shredded mozzarella cheese
- 1/2 cup sliced pepperoni
- 1/4 cup sliced black olives
- 1/4 cup sliced mushrooms
Instructions
- In a large bowl, whisk together the flour, milk, eggs, and salt until smooth.
- Heat a non-stick skillet over medium heat and melt a small amount of butter.
- Pour a ladleful of the pancake batter into the skillet, tilting the pan to spread the batter evenly.
- Cook the pancake for 2-3 minutes until the bottom is golden brown, then flip and cook the other side for an additional 2 minutes. Repeat with the remaining batter to make 4 pancakes.
- Preheat the oven to 400°F (200°C).
- Place the pancakes on a baking sheet and spread marinara sauce over each pancake.
- Sprinkle shredded mozzarella cheese over the marinara sauce, then add pepperoni, black olives, and mushrooms on top.
- Bake in the preheated oven for 10-12 minutes, or until the cheese is melted and bubbly.
- Slice the pancake pizzas and serve hot.
