Dutch Pancake Pizzas

Ingredients

  • 1 cup all-purpose flour
  • 1 1/2 cups milk
  • 2 eggs
  • 1/4 teaspoon salt
  • 1/4 cup butter
  • 1 cup marinara sauce
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup sliced pepperoni
  • 1/4 cup sliced black olives
  • 1/4 cup sliced mushrooms

Instructions

  1. In a large bowl, whisk together the flour, milk, eggs, and salt until smooth.
  2. Heat a non-stick skillet over medium heat and melt a small amount of butter.
  3. Pour a ladleful of the pancake batter into the skillet, tilting the pan to spread the batter evenly.
  4. Cook the pancake for 2-3 minutes until the bottom is golden brown, then flip and cook the other side for an additional 2 minutes. Repeat with the remaining batter to make 4 pancakes.
  5. Preheat the oven to 400°F (200°C).
  6. Place the pancakes on a baking sheet and spread marinara sauce over each pancake.
  7. Sprinkle shredded mozzarella cheese over the marinara sauce, then add pepperoni, black olives, and mushrooms on top.
  8. Bake in the preheated oven for 10-12 minutes, or until the cheese is melted and bubbly.
  9. Slice the pancake pizzas and serve hot.
