Dutch Pancake Roll-ups

Ingredients
- 4 large eggs
- 1 cup all-purpose flour
- 1 1/2 cups milk
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1/4 cup unsalted butter, melted
- 1/2 cup Nutella or chocolate spread
- 1 banana, sliced
- 1/4 cup chopped nuts (optional)
Instructions
- In a large mixing bowl, whisk together the eggs, flour, milk, salt, and vanilla extract until smooth.
- Heat a non-stick skillet over medium heat and brush with some of the melted butter.
- Pour a small ladleful of the pancake batter into the skillet and swirl to spread it evenly. Cook for 2-3 minutes until the bottom is golden brown, then flip and cook the other side for another 2 minutes. Repeat with the remaining batter to make 8-10 pancakes.
- Spread a thin layer of Nutella or chocolate spread over each pancake. Place a few banana slices and a sprinkle of chopped nuts on top.
- Roll up each pancake and place seam-side down on a serving platter.
- Sprinkle with powdered sugar and serve warm.
