Dutch Pancake Roll-ups

Ingredients

  • 4 large eggs
  • 1 cup all-purpose flour
  • 1 1/2 cups milk
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/4 cup unsalted butter, melted
  • 1/2 cup Nutella or chocolate spread
  • 1 banana, sliced
  • 1/4 cup chopped nuts (optional)

Instructions

  1. In a large mixing bowl, whisk together the eggs, flour, milk, salt, and vanilla extract until smooth.
  2. Heat a non-stick skillet over medium heat and brush with some of the melted butter.
  3. Pour a small ladleful of the pancake batter into the skillet and swirl to spread it evenly. Cook for 2-3 minutes until the bottom is golden brown, then flip and cook the other side for another 2 minutes. Repeat with the remaining batter to make 8-10 pancakes.
  4. Spread a thin layer of Nutella or chocolate spread over each pancake. Place a few banana slices and a sprinkle of chopped nuts on top.
  5. Roll up each pancake and place seam-side down on a serving platter.
  6. Sprinkle with powdered sugar and serve warm.
