Dutch Pancake Tacos

Ingredients

  • 4 large eggs
  • 1 cup all-purpose flour
  • 1 cup milk

  • 1/4 cup butter
  • 1 cup shredded cheddar cheese
  • 1 cup cooked and seasoned ground beef or black beans for a vegetarian option
  • 1 cup diced tomatoes

Instructions

  1. In a large bowl, whisk together the eggs, flour, milk, and salt until smooth.
  2. Heat a non-stick skillet over medium heat and melt a small amount of butter.
  3. Pour 1/4 cup of the pancake batter into the skillet and swirl to spread it evenly. Cook for 2-3 minutes until the bottom is golden brown, then flip and cook for an additional 1-2 minutes. Repeat with the remaining batter.
