Dutch Stroopwafel Cheesecake

Ingredients

  • 1 1/2 cups crushed stroopwafels
  • 1/4 cup melted butter
  • 24 oz cream cheese, softened
  • 1 cup sugar
  • 1 tsp vanilla extract
  • 4 eggs
  • 1/2 cup sour cream
  • 1/4 cup flour
  • 1/2 cup caramel sauce

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9-inch springform pan.
  2. In a bowl, mix the crushed stroopwafels and melted butter. Press the mixture into the bottom of the prepared pan.
  3. In a large bowl, beat the cream cheese, sugar, and vanilla until smooth. Add the eggs one at a time, beating well after each addition. Stir in the sour cream and flour until just combined.
  4. Pour half of the cream cheese mixture over the crust. Drizzle half of the caramel sauce over the batter. Repeat with the remaining batter and caramel sauce.
  5. Bake for 55-60 minutes or until the center is almost set. Allow the cheesecake to cool in the oven with the door ajar for 1 hour. Refrigerate for at least 4 hours or overnight before serving.
