Dutch Stroopwafels

Ingredients
- 2 1/4 cups all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/4 cup granulated sugar
- 1/2 teaspoon active dry yeast
- 1/4 cup warm milk
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup packed brown sugar
- 1/4 cup unsalted butter
- 1/4 teaspoon ground cinnamon
Instructions
- Dissolve the yeast in the warm milk and let it sit for 5 minutes.
- In a large bowl, mix the flour, softened butter, granulated sugar, egg, and vanilla extract. Pour in the yeast mixture and knead until a smooth dough forms. Cover and let it rise for 15 minutes.
- While the dough is rising, prepare the caramel filling by melting the brown sugar, butter, and cinnamon in a saucepan over low heat. Stir until smooth, then set aside.
- Divide the dough into small balls and cook them in a preheated waffle iron for about 2 minutes, or until golden brown.
- Cut each waffle in half horizontally and spread a generous amount of caramel filling on one half. Top with the other half and press gently to sandwich the filling.
