Ingredients

  • 2 lbs chicken, cut into pieces
  • 2 onions, chopped
  • 3 tomatoes, diced
  • 2 bell peppers, sliced
  • 1 cup chicken broth
  • 2 tbsp tomato paste
  • 2 tbsp vegetable oil
  • 1 tsp ginger, minced
  • 1 tsp garlic, minced
  • 1 tsp paprika
  • 1 tsp cayenne pepper
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the chopped onions, minced ginger, and garlic. Sauté until the onions are translucent.
  2. Add the chicken pieces to the pot and brown on all sides.
  3. Stir in the diced tomatoes, sliced bell peppers, tomato paste, paprika, cayenne pepper, salt, and pepper. Cook for 5 minutes.
  4. Pour in the chicken broth, cover the pot, and simmer for 45 minutes, or until the chicken is cooked through.
  5. Serve the Dzowoe Delight hot with steamed rice or boiled yams.
