Easy Fruitcake

Ingredients
- 2 cups mixed dried fruits (such as raisins, cranberries, and apricots)
- 1 cup chopped nuts (such as walnuts or pecans)

- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1/2 cup brown sugar
- 2 eggs
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
- In a large bowl, combine the dried fruits and nuts. In a separate bowl, sift together the flour, baking powder, and salt. Add the flour mixture to the fruit and nut mixture, and toss to coat.
- In another bowl, mix together the melted butter, brown sugar, eggs, and vanilla extract. Add this mixture to the fruit and flour mixture, and stir until well combined.
- Pour the batter into the prepared loaf pan, and smooth the top with a spatula.
- Bake in the preheated oven for 1 hour, or until a toothpick inserted into the center comes out clean.
- Allow the fruitcake to cool in the pan for 10 minutes, then remove from the pan and cool completely on a wire rack.
