Ingredients

  • 2 cups mixed dried fruits (such as raisins, cranberries, and apricots)
  • 1 cup chopped nuts (such as walnuts or pecans)
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1/2 cup brown sugar
  • 2 eggs
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
  2. In a large bowl, combine the dried fruits and nuts. In a separate bowl, sift together the flour, baking powder, and salt. Add the flour mixture to the fruit and nut mixture, and toss to coat.
  3. In another bowl, mix together the melted butter, brown sugar, eggs, and vanilla extract. Add this mixture to the fruit and flour mixture, and stir until well combined.
  4. Pour the batter into the prepared loaf pan, and smooth the top with a spatula.
  5. Bake in the preheated oven for 1 hour, or until a toothpick inserted into the center comes out clean.
  6. Allow the fruitcake to cool in the pan for 10 minutes, then remove from the pan and cool completely on a wire rack.
