Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 3 ripe bananas, mashed
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9x5 inch loaf pan.
  2. In a large bowl, combine the flour, baking soda, and salt.
  3. In a separate bowl, cream together the melted butter and sugar. Beat in the eggs, then stir in the mashed bananas and vanilla extract.
  4. Combine the banana mixture with the dry ingredients until well blended. Pour the batter into the prepared loaf pan.
  5. Bake for 60 to 65 minutes in the preheated oven, or until a toothpick inserted into the center of the loaf comes out clean.
  6. Let the bread cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
