Edinburgh Castle Chicken Tikka Masala
Edinburgh Castle Chicken Tikka Masala is a traditional Scottish dish with a rich and flavorful sauce that is perfect for a cozy night in. This recipe combines tender chicken with a creamy tomato-based sauce, infused with aromatic spices.
Ingredients
- 1.5 lbs (680g) boneless, skinless chicken thighs, cut into bite-sized pieces
- 1 cup (240ml) plain yogurt
- 2 tbsp (30ml) lemon juice
- 2 tsp (10g) ground cumin
- 2 tsp (10g) paprika
- 1 tsp (5g) ground cinnamon
- 1 tsp (5g) ground turmeric
- 1 tsp (5g) ground coriander
- 1 tsp (5g) cayenne pepper
- 4 cloves garlic, minced
- 1-inch (2.5cm) piece of ginger, grated
- 2 tbsp (30ml) vegetable oil
- 1 large onion, finely chopped
- 1 can (14oz/400g) crushed tomatoes
- 1 cup (240ml) chicken broth
- 1/2 cup (120ml) heavy cream
- Salt and pepper to taste
- Chopped fresh cilantro for garnish
Instructions
- In a large bowl, combine the yogurt, lemon juice, cumin, paprika, cinnamon, turmeric, coriander, cayenne pepper, half of the minced garlic, and half of the grated ginger. Add the chicken pieces and toss to coat. Cover and marinate in the refrigerator for at least 1 hour, or overnight for best results.
- Heat the vegetable oil in a large skillet over medium heat. Add the chopped onion and sauté until softened, about 5 minutes. Add the remaining garlic and ginger, and cook for another 2 minutes.
- Stir in the crushed tomatoes and chicken broth. Bring the mixture to a simmer, then add the marinated chicken pieces along with the marinade. Cook for 15-20 minutes, or until the chicken is cooked through.
- Stir in the heavy cream and season with salt and pepper to taste. Simmer for an additional 10 minutes to allow the flavors to meld together.
- Garnish with chopped fresh cilantro and serve the Edinburgh Castle Chicken Tikka Masala hot with steamed rice or naan bread.
