Eel Soup (soto Belut Twist)

Ingredients

  • 500g eel, cleaned and cut into pieces
  • 2 stalks lemongrass, smashed
  • 4 kaffir lime leaves
  • 5 cups water
  • 2 tomatoes, quartered
  • 3 shallots, thinly sliced
  • 3 cloves garlic, minced
  • 2 tablespoons vegetable oil
  • 1 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • Salt to taste
  • Sugar to taste
  • Fried shallots for garnish
  • Fresh cilantro for garnish

Instructions

  1. In a pot, heat the vegetable oil over medium heat. Add the shallots and garlic, and sauté until fragrant.
  2. Add the turmeric powder and coriander powder, and stir for a minute to release the flavors.
  3. Add the eel pieces, lemongrass, and kaffir lime leaves. Cook for 5 minutes, stirring occasionally.
  4. Pour in the water and bring to a boil. Reduce the heat and let it simmer for 30 minutes.
  5. Add the tomatoes, salt, and sugar. Simmer for another 15 minutes until the eel is tender and the flavors have melded together.
  6. Adjust the seasoning if needed. Remove from heat and discard the lemongrass and kaffir lime leaves.
  7. Serve the eel soup hot, garnished with fried shallots and fresh cilantro.
