Ingredients
- 500g eel, cleaned and cut into pieces
- 2 stalks lemongrass, smashed
- 4 kaffir lime leaves
- 5 cups water
- 2 tomatoes, quartered
- 3 shallots, thinly sliced
- 3 cloves garlic, minced
- 2 tablespoons vegetable oil
- 1 teaspoon turmeric powder
- 1 teaspoon coriander powder
- Salt to taste
- Sugar to taste
- Fried shallots for garnish
- Fresh cilantro for garnish
Instructions
- In a pot, heat the vegetable oil over medium heat. Add the shallots and garlic, and sauté until fragrant.
- Add the turmeric powder and coriander powder, and stir for a minute to release the flavors.
- Add the eel pieces, lemongrass, and kaffir lime leaves. Cook for 5 minutes, stirring occasionally.
- Pour in the water and bring to a boil. Reduce the heat and let it simmer for 30 minutes.
- Add the tomatoes, salt, and sugar. Simmer for another 15 minutes until the eel is tender and the flavors have melded together.
- Adjust the seasoning if needed. Remove from heat and discard the lemongrass and kaffir lime leaves.
- Serve the eel soup hot, garnished with fried shallots and fresh cilantro.
