Eesti Seene Pirukas (estonian Mushroom Pie)

Ingredients
- 500g mixed mushrooms, sliced
- 1 onion, finely chopped
- 3 tbsp butter
- 2 eggs
- 200ml heavy cream
- Salt and pepper to taste
- 500g puff pastry
Instructions
- In a pan, sauté the onions in butter until translucent.
- Add the mushrooms and cook until they release their liquid and it evaporates.
- In a bowl, whisk together the eggs, heavy cream, salt, and pepper.
- Roll out the puff pastry and line a pie dish with it.
- Spread the mushroom mixture over the pastry.
- Pour the egg and cream mixture over the mushrooms.
- Bake in a preheated oven at 180°C (350°F) for 40 minutes or until the filling is set and the pastry is golden brown.
