Eesti Seenesupp (estonian Mushroom Soup)

Ingredients
- 500g fresh mushrooms, sliced
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 3 tbsp butter
- 3 tbsp all-purpose flour
- 1 liter vegetable or mushroom broth
- 1 cup heavy cream
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, melt the butter over medium heat.
- Add the chopped onion and garlic, and sauté until softened.
- Add the sliced mushrooms and cook until they release their liquid and become golden brown.
- Sprinkle the flour over the mushrooms and stir to combine.
- Pour in the vegetable or mushroom broth, stirring constantly to avoid lumps.
- Simmer the soup for 15-20 minutes, then stir in the heavy cream.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh parsley.
