Ingredients

  • 3 tbsp all-purpose flour
  • 1 liter vegetable or mushroom broth
  • 1 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. In a large pot, melt the butter over medium heat.
  2. Add the chopped onion and garlic, and sauté until softened.
  3. Add the sliced mushrooms and cook until they release their liquid and become golden brown.
  4. Sprinkle the flour over the mushrooms and stir to combine.
  5. Pour in the vegetable or mushroom broth, stirring constantly to avoid lumps.
  6. Simmer the soup for 15-20 minutes, then stir in the heavy cream.
  7. Season with salt and pepper to taste.
  8. Serve hot, garnished with fresh parsley.
