Ingredients

  • 1 large head of cabbage
  • 1 lb ground beef
  • 1 cup cooked rice
  • 1 onion, finely chopped
  • 1 egg
  • 1/4 cup bread crumbs
  • 1 can (14 oz) tomato sauce
  • 1/4 cup brown sugar
  • 2 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F.
  2. Bring a large pot of water to a boil. Carefully remove the outer leaves of the cabbage and blanch them in the boiling water for 2-3 minutes, or until softened. Remove and set aside to cool.
  3. In a mixing bowl, combine the ground beef, cooked rice, chopped onion, egg, bread crumbs, salt, and pepper. Mix well.
  4. Take a blanched cabbage leaf and place a portion of the beef mixture in the center. Roll the leaf, tucking in the sides, to form a cabbage roll. Repeat with the remaining leaves and filling.
  5. Place the cabbage rolls in a large pot or Dutch oven. In a separate bowl, mix together the tomato sauce, brown sugar, and lemon juice. Pour the sauce over the cabbage rolls.
  6. Cover the pot and cook the cabbage rolls over low heat for 1.5-2 hours, or until the meat is fully cooked and the cabbage is tender.
  7. Serve the Eesti stiilis kapsarullid hot, with a side of mashed potatoes or crusty bread.
