Eesti stiilis marineeritud kurgid, or Estonian-style pickled cucumbers, are a popular and traditional dish in Estonian cuisine. These pickles are known for their tangy and slightly sweet flavor, making them a perfect accompaniment to a variety of dishes or as a tasty snack on their own.
Ingredients
- 1 kg pickling cucumbers, sliced
- 1 onion, thinly sliced
- 3-4 garlic cloves, crushed
- 2 cups water
- 1 cup white vinegar
- 1/4 cup granulated sugar
- 2 tbsp salt
- 1 tbsp whole black peppercorns
- 2 bay leaves
Instructions
- In a large pot, combine water, vinegar, sugar, salt, peppercorns, and bay leaves. Bring the mixture to a boil, stirring until the sugar and salt are dissolved.
- Add the sliced cucumbers, onion, and crushed garlic to the pot. Let the mixture simmer for 5 minutes, then remove from heat.
- Allow the pickles to cool to room temperature, then transfer them to a clean, sterilized quart-sized jar. Make sure the cucumbers are fully submerged in the liquid.
- Seal the jar and refrigerate the pickles for at least 24 hours before serving. The pickles will keep in the refrigerator for up to 2 weeks.
