Ingredients

  • 1.5 kg pork shoulder
  • 2 tbsp vegetable oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 cup beef or vegetable broth
  • 2 tbsp whole grain mustard
  • 1 tbsp honey
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 160°C (320°F).
  2. Season the pork shoulder with salt and pepper.
  3. Heat the vegetable oil in a large oven-safe pot or Dutch oven over medium-high heat. Sear the pork shoulder on all sides until browned, about 8-10 minutes.
  4. Remove the pork from the pot and set aside. Add the chopped onion and minced garlic to the pot and cook until softened, about 5 minutes.
  5. Return the pork to the pot and add the broth, whole grain mustard, and honey. Cover the pot and transfer it to the preheated oven.
  6. Bake for 1.5 to 2 hours, or until the pork is tender and easily shreds with a fork.
  7. Remove the pot from the oven and transfer the pork to a serving platter. Let it rest for a few minutes before slicing.
  8. Meanwhile, strain the cooking liquid and onions from the pot into a saucepan. Skim off any excess fat and bring the sauce to a simmer. Cook for a few minutes until slightly thickened.
  9. Season the sauce with salt and pepper to taste. Serve the sliced pork with the mustard sauce drizzled on top.
