Efo Egusi Quiche

Ingredients

  • 1 cup egusi seeds
  • 1/2 cup water
  • 1/4 cup palm oil
  • 1 onion, chopped
  • 2 tomatoes, diced
  • 3 cups spinach, chopped
  • 6 eggs
  • 1/2 cup milk
  • Salt and pepper to taste

Instructions

  1. In a bowl, mix the egusi seeds with water to form a paste.
  2. Heat the palm oil in a pan and sauté the chopped onion and diced tomatoes until softened.
  3. Add the egusi paste and cook for 5 minutes, stirring constantly.
  4. Stir in the chopped spinach and cook until wilted. Remove from heat and let it cool.
  5. In a separate bowl, whisk together the eggs, milk, salt, and pepper.
  6. Preheat the oven to 350°F (175°C).
  7. Spread the egusi and spinach mixture evenly in a greased pie dish.
  8. Pour the egg mixture over the top.
  9. Bake for 30-35 minutes, or until the quiche is set and golden brown.
  10. Let it cool for a few minutes before slicing and serving.
