Ingredients
- 1 cup egusi seeds
- 1/2 cup water
- 1/4 cup palm oil
- 1 onion, chopped
- 2 tomatoes, diced
- 3 cups spinach, chopped
- 6 eggs
- 1/2 cup milk
- Salt and pepper to taste
Instructions
- In a bowl, mix the egusi seeds with water to form a paste.
- Heat the palm oil in a pan and sauté the chopped onion and diced tomatoes until softened.
- Add the egusi paste and cook for 5 minutes, stirring constantly.
- Stir in the chopped spinach and cook until wilted. Remove from heat and let it cool.
- In a separate bowl, whisk together the eggs, milk, salt, and pepper.
- Preheat the oven to 350°F (175°C).
- Spread the egusi and spinach mixture evenly in a greased pie dish.
- Pour the egg mixture over the top.
- Bake for 30-35 minutes, or until the quiche is set and golden brown.
- Let it cool for a few minutes before slicing and serving.
