Efo Riro Enchiladas

Ingredients

  • 2 cups of efo riro
  • 8 corn tortillas
  • 1 cup of shredded cheese
  • 1/2 cup of chopped tomatoes
  • 1/4 cup of chopped onions
  • 1/4 cup of chopped bell peppers
  • 1 teaspoon of ground crayfish
  • 1 teaspoon of palm oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Warm the efo riro in a saucepan over medium heat.
  3. Fill each tortilla with a spoonful of efo riro, then roll it up and place it in a baking dish.
  4. Top the enchiladas with the remaining efo riro, shredded cheese, tomatoes, onions, and bell peppers.
  5. Bake for 20-25 minutes, or until the cheese is melted and bubbly.
