Egg Caldin (goan Style Egg Curry)

Ingredients

  • 6 hard-boiled eggs
  • 1 cup grated coconut
  • 1 onion, finely chopped
  • 2-3 green chilies, slit
  • 1-inch ginger, grated
  • 4-5 garlic cloves, minced
  • 1 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon garam masala
  • 1 tablespoon tamarind paste
  • 2 cups water
  • Salt to taste
  • 2 tablespoons oil

Instructions

  1. In a blender, combine the grated coconut, chopped onion, green chilies, ginger, and garlic. Blend to a smooth paste by adding a little water if needed.
  2. Heat oil in a pan and add the ground paste. Cook for 5-7 minutes until the raw smell disappears.
  3. Add turmeric powder, coriander powder, cumin powder, red chili powder, and salt. Mix well and cook for another 2-3 minutes.
  4. Pour in the water and bring the curry to a gentle boil.
  5. Add the tamarind paste and garam masala. Stir well and simmer for 5 minutes.
  6. Gently add the hard-boiled eggs to the curry and cook for an additional 5 minutes.
  7. Once the eggs are heated through, remove from heat and serve hot with steamed rice or crusty bread.
