Egg Fried Rice (蛋炒饭)

Ingredients

  • 3 cups cooked rice
  • 3 eggs, beaten
  • 1/2 cup frozen peas and carrots, thawed
  • 3 green onions, chopped
  • 3 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. In a small bowl, mix the soy sauce, salt, and pepper. Set aside.
  2. Heat 1 tablespoon of oil in a large skillet or wok over medium heat. Add the beaten eggs and scramble until cooked. Remove the eggs from the skillet and set aside.
  3. Heat the remaining oil in the same skillet. Add the green onions and sauté for 1-2 minutes.
  4. Add the cooked rice to the skillet and stir-fry for 3-4 minutes.
  5. Add the peas and carrots, and the cooked eggs to the skillet. Pour the soy sauce mixture over the rice and stir-fry for an additional 2-3 minutes.
  6. Remove from heat and serve hot.
