Ingredients
- 3 cups cooked rice
- 3 eggs, beaten
- 1/2 cup frozen peas and carrots, thawed
- 3 green onions, chopped
- 3 tablespoons soy sauce
- 2 tablespoons vegetable oil
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
Instructions
- In a small bowl, mix the soy sauce, salt, and pepper. Set aside.
- Heat 1 tablespoon of oil in a large skillet or wok over medium heat. Add the beaten eggs and scramble until cooked. Remove the eggs from the skillet and set aside.
- Heat the remaining oil in the same skillet. Add the green onions and sauté for 1-2 minutes.
- Add the cooked rice to the skillet and stir-fry for 3-4 minutes.
- Add the peas and carrots, and the cooked eggs to the skillet. Pour the soy sauce mixture over the rice and stir-fry for an additional 2-3 minutes.
- Remove from heat and serve hot.
