Eggplant Omelette (tortang Talong)

Ingredients

  • 4 large eggplants
  • 4 eggs
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 tomato, diced
  • Salt and pepper to taste
  • Cooking oil

Instructions

  1. Roast the eggplants over an open flame or grill until the skin is charred and the flesh is soft. Let them cool, then peel off the skin and flatten the flesh with a fork.
  2. In a bowl, beat the eggs and season with salt and pepper. Add the chopped onion, minced garlic, and diced tomato. Mix well.
  3. Place a portion of the eggplant on the egg mixture and coat it evenly.

  5. Repeat the process for the remaining eggplants and egg mixture.
  6. Serve the Eggplant Omelette hot with rice and your choice of dipping sauce.
