Eggplant Omelette (tortang Talong)
Eggplant Omelette, also known as Tortang Talong, is a popular Filipino dish that is simple to make and bursting with flavor. This Kapampangan Cuisine version of the dish adds a unique twist to the classic omelette.
Ingredients
- 4 large eggplants
- 4 eggs
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 tomato, diced
- Salt and pepper to taste
- Cooking oil
Instructions
- Roast the eggplants over an open flame or grill until the skin is charred and the flesh is soft. Let them cool, then peel off the skin and flatten the flesh with a fork.
- In a bowl, beat the eggs and season with salt and pepper. Add the chopped onion, minced garlic, and diced tomato. Mix well.
- Place a portion of the eggplant on the egg mixture and coat it evenly.
- Heat some oil in a pan over medium heat. Carefully place the eggplant in the pan and pour some of the egg mixture over it to form an omelette. Cook until the bottom is set and golden brown, then carefully flip to cook the other side.
- Repeat the process for the remaining eggplants and egg mixture.
- Serve the Eggplant Omelette hot with rice and your choice of dipping sauce.
