Eggplant Pork

Ingredients

  • 1 large eggplant, cut into cubes
  • 1 lb pork loin, thinly sliced
  • 3 cloves garlic, minced
  • 1 onion, sliced
  • 1 red bell pepper, sliced
  • 3 tbsp soy sauce
  • 2 tbsp oyster sauce
  • 1 tbsp cornstarch
  • 1/2 cup chicken broth
  • 2 tbsp vegetable oil
  • Salt and pepper to taste

Instructions

  1. Season the pork with salt, pepper, and 1 tbsp of soy sauce. Set aside.
  2. In a small bowl, mix the cornstarch with 2 tbsp of water to make a slurry. Set aside.
  3. Heat 1 tbsp of vegetable oil in a large skillet over medium-high heat. Add the pork and cook until browned. Remove from the skillet and set aside.
  4. Heat the remaining oil in the same skillet. Add the garlic and onion, and cook until softened.
  5. Add the eggplant and bell pepper, and cook until the vegetables are tender.
  6. Return the pork to the skillet. Stir in the remaining soy sauce, oyster sauce, and chicken broth. Bring to a simmer.
  7. Stir in the cornstarch slurry and cook until the sauce thickens.
  8. Adjust the seasoning with salt and pepper, if needed.
  9. Serve the eggplant pork hot with steamed rice.
