Eggplant Pork
Eggplant pork is a delicious and savory dish that combines the rich flavors of eggplant with tender pork. This recipe is perfect for a hearty and satisfying meal.
Ingredients
- 1 large eggplant, cut into cubes
- 1 lb pork loin, thinly sliced
- 3 cloves garlic, minced
- 1 onion, sliced
- 1 red bell pepper, sliced
- 3 tbsp soy sauce
- 2 tbsp oyster sauce
- 1 tbsp cornstarch
- 1/2 cup chicken broth
- 2 tbsp vegetable oil
- Salt and pepper to taste
Instructions
- Season the pork with salt, pepper, and 1 tbsp of soy sauce. Set aside.
- In a small bowl, mix the cornstarch with 2 tbsp of water to make a slurry. Set aside.
- Heat 1 tbsp of vegetable oil in a large skillet over medium-high heat. Add the pork and cook until browned. Remove from the skillet and set aside.
- Heat the remaining oil in the same skillet. Add the garlic and onion, and cook until softened.
- Add the eggplant and bell pepper, and cook until the vegetables are tender.
- Return the pork to the skillet. Stir in the remaining soy sauce, oyster sauce, and chicken broth. Bring to a simmer.
- Stir in the cornstarch slurry and cook until the sauce thickens.
- Adjust the seasoning with salt and pepper, if needed.
- Serve the eggplant pork hot with steamed rice.
