Eggplant Rolls (ТӀухираш)

Ingredients

  • 2 large eggplants
  • 1 lb ground beef
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Preheat the oven to 375°F.
  2. Slice the eggplants lengthwise into thin strips.
  3. In a bowl, mix the ground beef, onion, garlic, parsley, cilantro, cumin, paprika, salt, and pepper.
  4. Place a spoonful of the meat mixture onto each eggplant slice and roll it up.
  5. Heat the olive oil in a large skillet over medium heat.
  6. Cook the eggplant rolls in the skillet for 3-4 minutes on each side, or until the meat is cooked through.
  7. Transfer the rolls to a baking dish and bake in the preheated oven for 10 minutes.
