Ingredients
- 2 large eggplants
- 1 lb ground beef
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh cilantro, chopped
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Preheat the oven to 375°F.
- Slice the eggplants lengthwise into thin strips.
- In a bowl, mix the ground beef, onion, garlic, parsley, cilantro, cumin, paprika, salt, and pepper.
- Place a spoonful of the meat mixture onto each eggplant slice and roll it up.

- Cook the eggplant rolls in the skillet for 3-4 minutes on each side, or until the meat is cooked through.
- Transfer the rolls to a baking dish and bake in the preheated oven for 10 minutes.
