Eggplant Tofu

Ingredients

  • 1 large eggplant, diced
  • 1 block firm tofu, cubed
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 tablespoon cornstarch
  • 2 green onions, chopped
  • 1 tablespoon vegetable oil

Instructions

  1. In a small bowl, mix together soy sauce, sesame oil, garlic, ginger, and cornstarch to make the sauce.
  2. Heat vegetable oil in a large skillet over medium heat. Add the diced eggplant and cook for 5 minutes, stirring occasionally.
  3. Add the tofu to the skillet and cook for an additional 5 minutes.
  4. Pour the sauce over the eggplant and tofu, and stir to coat evenly. Cook for 5-7 minutes until the sauce thickens.
  5. Sprinkle chopped green onions on top before serving.
