Eggplant Tofu

Ingredients
- 1 large eggplant, diced
- 1 block firm tofu, cubed
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 tablespoon cornstarch
- 2 green onions, chopped
- 1 tablespoon vegetable oil
Instructions
- In a small bowl, mix together soy sauce, sesame oil, garlic, ginger, and cornstarch to make the sauce.
- Heat vegetable oil in a large skillet over medium heat. Add the diced eggplant and cook for 5 minutes, stirring occasionally.
- Add the tofu to the skillet and cook for an additional 5 minutes.
- Pour the sauce over the eggplant and tofu, and stir to coat evenly. Cook for 5-7 minutes until the sauce thickens.
- Sprinkle chopped green onions on top before serving.
