Ingredients

  • 1 cup egusi seeds
  • 1 cup all-purpose flour
  • 1 small onion, finely chopped
  • 2 eggs
  • 1 teaspoon ground crayfish
  • 1 teaspoon bouillon powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground pepper
  • 1/2 cup water
  • Vegetable oil for frying

Instructions

  1. In a bowl, combine the egusi seeds, all-purpose flour, chopped onion, eggs, ground crayfish, bouillon powder, salt, pepper, and water. Mix well to form a thick batter.
  2. Heat a non-stick skillet over medium heat and lightly grease with vegetable oil.
  3. Pour a ladleful of the batter onto the skillet and spread it into a round shape. Cook for 2-3 minutes on each side until golden brown.
  4. Repeat with the remaining batter, adding more oil to the skillet as needed.
  5. Transfer the egusi pancakes to a plate and serve hot.
