Ingredients
- 1 cup egusi seeds
- 1 cup all-purpose flour
- 1 small onion, finely chopped
- 2 eggs
- 1 teaspoon ground crayfish
- 1 teaspoon bouillon powder
- 1/2 teaspoon salt
- 1/4 teaspoon ground pepper
- 1/2 cup water
- Vegetable oil for frying
Instructions
- In a bowl, combine the egusi seeds, all-purpose flour, chopped onion, eggs, ground crayfish, bouillon powder, salt, pepper, and water. Mix well to form a thick batter.
- Heat a non-stick skillet over medium heat and lightly grease with vegetable oil.
- Pour a ladleful of the batter onto the skillet and spread it into a round shape. Cook for 2-3 minutes on each side until golden brown.
- Repeat with the remaining batter, adding more oil to the skillet as needed.
- Transfer the egusi pancakes to a plate and serve hot.
