Ingredients
- 1 cup ground egusi (melon seeds)
- 1 pound assorted meats (beef, tripe, and/or cow feet)
- 1 onion, chopped
- 2 tomatoes, chopped
- 1/2 cup palm oil
- 2 cups spinach, chopped
- 2 cups water or broth
- Salt and pepper to taste
Instructions
- Heat the palm oil in a pot over medium heat.
- Add the chopped onions and tomatoes, and sauté until softened.
- Add the assorted meats and cook until browned.
- Stir in the ground egusi and cook for 5 minutes, stirring constantly.
- Pour in the water or broth, cover the pot, and let it simmer for 30 minutes.
- Add the chopped spinach, salt, and pepper, and simmer for an additional 10 minutes.
- Adjust seasoning if needed, and serve hot with fufu or rice.
