Ingredients

  • 1 cup ground egusi (melon seeds)
  • 1 pound assorted meats (beef, tripe, and/or cow feet)
  • 1 onion, chopped
  • 2 tomatoes, chopped
  • 1/2 cup palm oil
  • 2 cups spinach, chopped
  • 2 cups water or broth
  • Salt and pepper to taste

Instructions

  1. Heat the palm oil in a pot over medium heat.
  2. Add the chopped onions and tomatoes, and sauté until softened.
  3. Add the assorted meats and cook until browned.
  4. Stir in the ground egusi and cook for 5 minutes, stirring constantly.
  5. Pour in the water or broth, cover the pot, and let it simmer for 30 minutes.
  6. Add the chopped spinach, salt, and pepper, and simmer for an additional 10 minutes.
  7. Adjust seasoning if needed, and serve hot with fufu or rice.
