Ingredients

  • 1 cup egusi seeds
  • 1 pound beef, cut into cubes

  • 2 tomatoes, diced
  • 1 cup chopped spinach
  • 2 cups coco yam, peeled and grated
  • 1 teaspoon ground crayfish
  • 1 scotch bonnet pepper, chopped
  • 2 cups chicken broth
  • 1/4 cup palm oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the palm oil over medium heat. Add the chopped onion and cook until translucent.
  2. Add the beef cubes and cook until browned on all sides.
  3. Stir in the diced tomatoes, egusi seeds, ground crayfish, and scotch bonnet pepper. Cook for 5 minutes.
  4. Pour in the chicken broth and bring the soup to a simmer. Let it cook for 30 minutes.
  5. In a separate bowl, combine the grated coco yam with a pinch of salt. Form the mixture into small dumplings and gently drop them into the simmering soup.
  6. Add the chopped spinach to the soup and cook for an additional 10 minutes.
  7. Season with salt and pepper to taste.
