Ingredients
- 1 cup egusi seeds
- 1 pound beef, cut into cubes
- 1 onion, chopped

- 2 cups coco yam, peeled and grated
- 1 teaspoon ground crayfish
- 1 scotch bonnet pepper, chopped
- 2 cups chicken broth
- 1/4 cup palm oil
- Salt and pepper to taste
Instructions
- In a large pot, heat the palm oil over medium heat. Add the chopped onion and cook until translucent.
- Add the beef cubes and cook until browned on all sides.
- Stir in the diced tomatoes, egusi seeds, ground crayfish, and scotch bonnet pepper. Cook for 5 minutes.
- Pour in the chicken broth and bring the soup to a simmer. Let it cook for 30 minutes.
- In a separate bowl, combine the grated coco yam with a pinch of salt. Form the mixture into small dumplings and gently drop them into the simmering soup.
- Add the chopped spinach to the soup and cook for an additional 10 minutes.
- Season with salt and pepper to taste.
