Egyptian Koshari Bowl With Lentils And Rice
Koshari is a popular Egyptian street food that is a delicious and hearty combination of lentils, rice, pasta, and a flavorful tomato sauce. This recipe is a vegetarian favorite and is perfect for a satisfying and budget-friendly meal.
Ingredients
- 1 cup brown lentils
- 1 cup basmati rice
- 1 cup elbow macaroni
- 1 onion, thinly sliced
- 3 garlic cloves, minced
- 2 tablespoons olive oil
- 1 can (14 oz) crushed tomatoes
- 2 tablespoons tomato paste
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon cayenne pepper
- Salt and pepper to taste
Instructions
- Rinse the lentils and cook them in a pot of boiling water for 20-25 minutes until tender. Drain and set aside.
- Cook the rice according to package instructions and set aside.
- Cook the elbow macaroni according to package instructions and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the sliced onion and cook until golden brown. Add the minced garlic and cook for another minute.
- Stir in the crushed tomatoes, tomato paste, cumin, coriander, cayenne pepper, salt, and pepper. Simmer for 10-15 minutes.
- To serve, layer the lentils, rice, and macaroni in a bowl. Top with the tomato sauce and garnish with crispy fried onions if desired.
