Egyptian Koshari Bowl With Lentils And Rice

Ingredients

  • 1 cup brown lentils
  • 1 cup basmati rice
  • 1 cup elbow macaroni
  • 1 onion, thinly sliced
  • 3 garlic cloves, minced
  • 2 tablespoons olive oil
  • 1 can (14 oz) crushed tomatoes
  • 2 tablespoons tomato paste
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon cayenne pepper
  • Salt and pepper to taste

Instructions

  1. Rinse the lentils and cook them in a pot of boiling water for 20-25 minutes until tender. Drain and set aside.
  2. Cook the rice according to package instructions and set aside.
  3. Cook the elbow macaroni according to package instructions and set aside.
  4. In a large skillet, heat the olive oil over medium heat. Add the sliced onion and cook until golden brown. Add the minced garlic and cook for another minute.
  5. Stir in the crushed tomatoes, tomato paste, cumin, coriander, cayenne pepper, salt, and pepper. Simmer for 10-15 minutes.
  6. To serve, layer the lentils, rice, and macaroni in a bowl. Top with the tomato sauce and garnish with crispy fried onions if desired.
