Egyptian Koshari (Lentils, Rice, and Pasta Dish)
This Lentils, Rice, and Pasta Dish, also known as Egyptian Koshari, is a delicious and hearty meal that is popular in Eastern Arabian cuisine. It's a flavorful combination of lentils, rice, and pasta, topped with a spiced tomato sauce and crispy fried onions.
Ingredients
- 1 cup brown lentils
- 1 cup basmati rice
- 1 cup short pasta (such as macaroni or penne)
- 1 onion, thinly sliced
- 3 cloves garlic, minced
- 1 can (14 oz) crushed tomatoes
- 2 tablespoons olive oil
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon cayenne pepper
- Salt and pepper to taste
Instructions
- In a large pot, cook the lentils according to package instructions. Drain and set aside.
- Cook the rice according to package instructions. Fluff with a fork and set aside.
- Cook the pasta according to package instructions. Drain and set aside.
- In a separate pan, heat 1 tablespoon of olive oil over medium heat. Add the sliced onions and cook until crispy and brown. Remove from the pan and set aside.
- In the same pan, add the remaining olive oil and sauté the garlic until fragrant. Add the crushed tomatoes, cumin, coriander, cayenne pepper, salt, and pepper. Simmer for 10-15 minutes.
- To serve, layer the cooked lentils, rice, and pasta in a bowl. Top with the spiced tomato sauce and crispy fried onions.
