Egyptian Koshari (Lentils, Rice, and Pasta Dish)

Ingredients

  • 1 cup brown lentils
  • 1 cup basmati rice
  • 1 cup short pasta (such as macaroni or penne)
  • 1 onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 can (14 oz) crushed tomatoes
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon cayenne pepper
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the lentils according to package instructions. Drain and set aside.
  2. Cook the rice according to package instructions. Fluff with a fork and set aside.
  3. Cook the pasta according to package instructions. Drain and set aside.
  4. In a separate pan, heat 1 tablespoon of olive oil over medium heat. Add the sliced onions and cook until crispy and brown. Remove from the pan and set aside.
  5. In the same pan, add the remaining olive oil and sauté the garlic until fragrant. Add the crushed tomatoes, cumin, coriander, cayenne pepper, salt, and pepper. Simmer for 10-15 minutes.
  6. To serve, layer the cooked lentils, rice, and pasta in a bowl. Top with the spiced tomato sauce and crispy fried onions.
