Egyptian Kushari Bowl With Spiced Tomato Sauce

Ingredients

  • 1 cup rice
  • 1 cup brown lentils
  • 1 cup elbow macaroni
  • 1 large onion, thinly sliced
  • 4 cloves garlic, minced
  • 2 tbsp vegetable oil
  • 1 can (14 oz) crushed tomatoes
  • 2 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp cayenne pepper
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a large pot, cook the rice according to package instructions. Drain and set aside.
  2. In a separate pot, cook the lentils in boiling water for 15-20 minutes or until tender. Drain and set aside.
  3. Cook the elbow macaroni according to package instructions. Drain and set aside.
  4. In a large skillet, heat the vegetable oil over medium heat. Add the sliced onion and cook until golden brown and caramelized.
  5. Add the minced garlic to the skillet and cook for an additional 1-2 minutes.
  6. Stir in the crushed tomatoes, ground cumin, ground coriander, cayenne pepper, salt, and black pepper. Simmer the sauce for 10 minutes.
  7. To assemble the kushari bowls, divide the rice, lentils, and macaroni among serving bowls. Top with the spiced tomato sauce and caramelized onions.
