Egyptian Kushari Bowl With Spiced Tomato Sauce
Kushari is a popular Egyptian street food that is a delicious combination of rice, lentils, pasta, and spiced tomato sauce. This hearty and flavorful dish is a staple in Egyptian cuisine and is perfect for a satisfying and comforting meal.
Ingredients
- 1 cup rice
- 1 cup brown lentils
- 1 cup elbow macaroni
- 1 large onion, thinly sliced
- 4 cloves garlic, minced
- 2 tbsp vegetable oil
- 1 can (14 oz) crushed tomatoes
- 2 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp cayenne pepper
- Salt to taste
- Black pepper to taste
Instructions
- In a large pot, cook the rice according to package instructions. Drain and set aside.
- In a separate pot, cook the lentils in boiling water for 15-20 minutes or until tender. Drain and set aside.
- Cook the elbow macaroni according to package instructions. Drain and set aside.
- In a large skillet, heat the vegetable oil over medium heat. Add the sliced onion and cook until golden brown and caramelized.
- Add the minced garlic to the skillet and cook for an additional 1-2 minutes.
- Stir in the crushed tomatoes, ground cumin, ground coriander, cayenne pepper, salt, and black pepper. Simmer the sauce for 10 minutes.
- To assemble the kushari bowls, divide the rice, lentils, and macaroni among serving bowls. Top with the spiced tomato sauce and caramelized onions.
