Egyptian Kushari (Mixed Rice, Lentils, and Pasta)

Ingredients

  • 1 cup basmati rice
  • 1 cup brown lentils
  • 1 cup elbow macaroni
  • 1/4 cup olive oil
  • 1 large onion, thinly sliced
  • 4 cloves garlic, minced
  • 1 can (14 oz) crushed tomatoes
  • 2 tablespoons white vinegar
  • 1 teaspoon ground cumin
  • 1 teaspoon ground cinnamon
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the rice and lentils according to package instructions. In a separate pot, cook the macaroni until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the sliced onion and cook until golden brown and caramelized.
  3. Add the minced garlic to the skillet and cook for an additional 1-2 minutes.
  4. Stir in the crushed tomatoes, white vinegar, cumin, cinnamon, salt, and pepper. Simmer for 10 minutes.
  5. To serve, layer the cooked rice, lentils, and macaroni in a bowl. Top with the tomato sauce and caramelized onions.
