Egyptian Kushari (Mixed Rice, Lentils, and Pasta)
Mixed Rice, Lentils, and Pasta (Egyptian Kushari) is a popular dish in Eastern Arabian cuisine, known for its flavorful combination of grains and legumes.
Ingredients
- 1 cup basmati rice
- 1 cup brown lentils
- 1 cup elbow macaroni
- 1/4 cup olive oil
- 1 large onion, thinly sliced
- 4 cloves garlic, minced
- 1 can (14 oz) crushed tomatoes
- 2 tablespoons white vinegar
- 1 teaspoon ground cumin
- 1 teaspoon ground cinnamon
- Salt and pepper to taste
Instructions
- In a large pot, cook the rice and lentils according to package instructions. In a separate pot, cook the macaroni until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the sliced onion and cook until golden brown and caramelized.
- Add the minced garlic to the skillet and cook for an additional 1-2 minutes.
- Stir in the crushed tomatoes, white vinegar, cumin, cinnamon, salt, and pepper. Simmer for 10 minutes.
- To serve, layer the cooked rice, lentils, and macaroni in a bowl. Top with the tomato sauce and caramelized onions.
