Ingredients
- 4 large bell peppers
- 1 cup rice
- 1 onion, finely chopped
- 2 tomatoes, diced
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh dill, chopped
- 1/4 cup tomato paste
- 2 tablespoons olive oil
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 cups vegetable broth
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds and membranes.
- In a large bowl, combine the rice, onion, tomatoes, parsley, dill, tomato paste, olive oil, cumin, paprika, salt, and pepper. Mix well.
- Stuff the bell peppers with the rice mixture and place them in a deep pot.
- Pour the vegetable broth into the pot around the stuffed peppers.
- Cover the pot and cook over medium heat for 45 minutes, or until the peppers are tender and the rice is cooked.
