Ingredients

  • 4 large bell peppers
  • 1 cup rice
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh dill, chopped
  • 1/4 cup tomato paste
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 cups vegetable broth

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a large bowl, combine the rice, onion, tomatoes, parsley, dill, tomato paste, olive oil, cumin, paprika, salt, and pepper. Mix well.
  4. Stuff the bell peppers with the rice mixture and place them in a deep pot.
  5. Pour the vegetable broth into the pot around the stuffed peppers.
  6. Cover the pot and cook over medium heat for 45 minutes, or until the peppers are tender and the rice is cooked.
  7. Remove the stuffed peppers from the pot and place them on a serving dish.
