Eingelegte Gurken, or pickled cucumbers, are a popular traditional dish in Lower Saxon cuisine. This recipe creates a tangy and crunchy snack that is perfect for serving alongside hearty German meals or as a tasty addition to sandwiches and salads.
Ingredients
- 6-8 small pickling cucumbers
- 2 cups water
- 1 1/2 cups white vinegar
- 1/4 cup granulated sugar
- 2 tbsp salt
- 4 cloves garlic, peeled
- 2 tsp whole black peppercorns
- 2 bay leaves
Instructions
- Wash the cucumbers and slice off the ends. Cut into spears or slices, depending on your preference.
- In a saucepan, combine water, vinegar, sugar, and salt. Bring to a boil, stirring to dissolve the sugar and salt.
- Place the garlic, peppercorns, and bay leaves in the bottom of two clean jars. Pack the cucumber slices or spears into the jars, leaving a little space at the top.
- Pour the hot vinegar mixture over the cucumbers, ensuring they are completely covered. Seal the jars tightly.
- Allow the pickled cucumbers to cool to room temperature, then refrigerate for at least 24 hours before serving.
