Eish Essaraya, also known as Date and Walnut Bread Pudding, is a traditional dessert from Kuwaiti cuisine. This sweet and comforting pudding is made with layers of bread, dates, and walnuts, all soaked in a rich and creamy custard.

Ingredients

  • 6 slices of white bread, crusts removed
  • 1 cup chopped dates
  • 1/2 cup chopped walnuts
  • 4 eggs
  • 1/2 cup sugar
  • 2 cups milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cardamom
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/4 cup melted butter

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9x13 inch baking dish.
  2. Cut the bread into cubes and place half of them in the prepared baking dish.
  3. Sprinkle half of the chopped dates and walnuts over the bread cubes.
  4. Layer the remaining bread cubes, dates, and walnuts on top.
  5. In a bowl, whisk together the eggs, sugar, milk, vanilla extract, cardamom, nutmeg, and salt.
  6. Pour the egg mixture over the bread, dates, and walnuts. Press down gently to ensure the bread is soaked in the custard.
  7. Drizzle the melted butter over the top.
  8. Bake in the preheated oven for 45-50 minutes, or until the pudding is set and the top is golden brown.
  9. Let it cool for a few minutes before serving.
