Eish Essaraya (date And Walnut Bread Pudding)
Eish Essaraya, also known as Date and Walnut Bread Pudding, is a traditional dessert from Kuwaiti cuisine. This sweet and comforting pudding is made with layers of bread, dates, and walnuts, all soaked in a rich and creamy custard.
Ingredients
- 6 slices of white bread, crusts removed
- 1 cup chopped dates
- 1/2 cup chopped walnuts
- 4 eggs
- 1/2 cup sugar
- 2 cups milk
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cardamom
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1/4 cup melted butter
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9x13 inch baking dish.
- Cut the bread into cubes and place half of them in the prepared baking dish.
- Sprinkle half of the chopped dates and walnuts over the bread cubes.
- Layer the remaining bread cubes, dates, and walnuts on top.
- In a bowl, whisk together the eggs, sugar, milk, vanilla extract, cardamom, nutmeg, and salt.
- Pour the egg mixture over the bread, dates, and walnuts. Press down gently to ensure the bread is soaked in the custard.
- Drizzle the melted butter over the top.
- Bake in the preheated oven for 45-50 minutes, or until the pudding is set and the top is golden brown.
- Let it cool for a few minutes before serving.
