Ingredients
- 2 tablespoons vegetable oil
- 1 onion, sliced
- 2 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 2 carrots, julienned
- 1 cup green beans, trimmed
- 1 teaspoon soy sauce
- 1 teaspoon curry powder
- Salt and pepper to taste
Instructions
- Heat the vegetable oil in a large pan or wok over medium-high heat.
- Add the sliced onion and minced garlic, and sauté until the onion is translucent.
- Add the sliced red and green bell peppers, julienned carrots, and trimmed green beans to the pan. Stir-fry for 5-7 minutes until the vegetables are tender-crisp.
- Season the stir-fry with soy sauce, curry powder, salt, and pepper. Stir well to combine.
- Remove from heat and serve the Ugandan Vegetable Stir-Fry hot as a main dish or side dish.
