Ekitobero (Ugandan Vegetable Stir-Fry)

Ingredients

  • 2 tablespoons vegetable oil
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 2 carrots, julienned
  • 1 cup green beans, trimmed
  • 1 teaspoon soy sauce
  • 1 teaspoon curry powder
  • Salt and pepper to taste

Instructions

  1. Heat the vegetable oil in a large pan or wok over medium-high heat.
  2. Add the sliced onion and minced garlic, and sauté until the onion is translucent.
  3. Add the sliced red and green bell peppers, julienned carrots, and trimmed green beans to the pan. Stir-fry for 5-7 minutes until the vegetables are tender-crisp.
  4. Season the stir-fry with soy sauce, curry powder, salt, and pepper. Stir well to combine.
  5. Remove from heat and serve the Ugandan Vegetable Stir-Fry hot as a main dish or side dish.
