- 1 cup grated cocoyam leaves

- 1 onion, finely chopped
- 2 cups coconut milk
- 1 cup palm oil
- Salt to taste
Instructions
- Combine the grated cocoyam, water yam, plantains, and cocoyam leaves in a bowl.
- Add the crayfish, chopped onion, coconut milk, palm oil, and salt. Mix well to form a thick batter.
- Heat a non-stick pan over medium heat and lightly grease with palm oil.
- Scoop a portion of the batter onto the pan to form a pancake. Cook for 3-4 minutes on each side until golden brown.
- Repeat the process with the remaining batter to make more pancakes.
