Ingredients
- 4 boneless, skinless chicken breasts
- 2 cups grated cocoyam
- 1 cup chopped leafy greens (such as spinach or kale)
- 1 onion, finely chopped
- 2 tomatoes, diced
- 2 tablespoons palm oil
- 1 teaspoon ground crayfish
- 1 teaspoon salt
- 1 teaspoon ground pepper
Instructions
- Preheat the oven to 375°F (190°C).
- Using a sharp knife, carefully slice a pocket into each chicken breast, being careful not to cut all the way through.
- In a bowl, combine the grated cocoyam, chopped leafy greens, onion, tomatoes, palm oil, ground crayfish, salt, and pepper to make the Ekpang Nkukwo stuffing.
- Stuff each chicken breast with the Ekpang Nkukwo mixture, then secure the openings with toothpicks.
- Heat a skillet over medium heat and sear the stuffed chicken breasts until golden brown on all sides.
