Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 cups grated cocoyam
  • 1 cup chopped leafy greens (such as spinach or kale)
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 2 tablespoons palm oil
  • 1 teaspoon ground crayfish
  • 1 teaspoon salt
  • 1 teaspoon ground pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Using a sharp knife, carefully slice a pocket into each chicken breast, being careful not to cut all the way through.
  3. In a bowl, combine the grated cocoyam, chopped leafy greens, onion, tomatoes, palm oil, ground crayfish, salt, and pepper to make the Ekpang Nkukwo stuffing.
