Ingredients

  • 4 medium zucchinis
  • 1 cup grated cocoyam
  • 1 cup shredded smoked fish
  • 1/2 cup palm oil
  • 1 onion, finely chopped
  • 2 tablespoons ground crayfish
  • 1 teaspoon ground pepper
  • Salt to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the zucchinis in half lengthwise and scoop out the seeds to create boat-like shapes.
  3. In a bowl, mix the grated cocoyam, shredded smoked fish, chopped onion, ground crayfish, ground pepper, and salt.
  4. Stuff the zucchini boats with the cocoyam mixture.
  5. Place the stuffed zucchinis in a baking dish and drizzle with palm oil.
  6. Cover the dish with foil and bake for 30 minutes.
