Instructions
- Preheat the oven to 375°F (190°C).
- Cut the zucchinis in half lengthwise and scoop out the seeds to create boat-like shapes.
- In a bowl, mix the grated cocoyam, shredded smoked fish, chopped onion, ground crayfish, ground pepper, and salt.
- Stuff the zucchini boats with the cocoyam mixture.
