Ingredients

  • 2 lbs spinach, washed and chopped
  • 1 lb smoked fish, deboned and flaked
  • 1 cup palm oil
  • 1 onion, chopped
  • 2 tomatoes, chopped
  • 2 garlic cloves, minced
  • 1 inch ginger, grated
  • 2 cups water or fish stock
  • Salt and pepper to taste

Instructions

  1. Heat the palm oil in a large pot over medium heat.
  2. Add the chopped onions, garlic, and ginger. Sauté until fragrant.
  3. Add the chopped tomatoes and cook until softened.
  4. Stir in the chopped spinach and cook until wilted.
  5. Add the flaked smoked fish and water or fish stock. Season with salt and pepper.
  6. Cover and simmer for 45-60 minutes, stirring occasionally, until the stew thickens.
  7. Serve hot with boiled plantains or rice.
