Ingredients
- 2 lbs spinach, washed and chopped
- 1 lb smoked fish, deboned and flaked
- 1 cup palm oil
- 1 onion, chopped
- 2 tomatoes, chopped
- 2 garlic cloves, minced
- 1 inch ginger, grated
- 2 cups water or fish stock
- Salt and pepper to taste
Instructions
- Heat the palm oil in a large pot over medium heat.
- Add the chopped onions, garlic, and ginger. Sauté until fragrant.
- Add the chopped tomatoes and cook until softened.
- Stir in the chopped spinach and cook until wilted.
- Add the flaked smoked fish and water or fish stock. Season with salt and pepper.
- Cover and simmer for 45-60 minutes, stirring occasionally, until the stew thickens.
- Serve hot with boiled plantains or rice.
