Elachi Pulao (fragrant Cardamom Rice)

Ingredients

  • 2 cups basmati rice
  • 4 cups water
  • 4-5 green cardamom pods
  • 2 tablespoons ghee (clarified butter)
  • 1 cinnamon stick
  • 1 teaspoon cumin seeds
  • 1 onion, thinly sliced
  • Salt to taste

Instructions

  1. Rinse the basmati rice until the water runs clear, then soak the rice in water for 30 minutes. Drain and set aside.
  2. In a large pot, heat the ghee over medium heat. Add the green cardamom pods, cinnamon stick, and cumin seeds. Sauté for 1-2 minutes until fragrant.
  3. Add the sliced onion and cook until golden brown.
  4. Stir in the drained rice and sauté for 2-3 minutes.
  5. Pour in the water and add salt. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes or until the rice is cooked and the water is absorbed.
  6. Fluff the rice with a fork and serve hot.
