Elu Mas Curry (spicy Sri Lankan Beef Curry)

Ingredients
- 1 kg beef, cut into cubes
- 2 onions, finely sliced
- 3 tomatoes, chopped
- 1/4 cup vegetable oil
- 1 cinnamon stick
- 4 cardamom pods
- 6 cloves
- 1 sprig curry leaves
- 1 tsp mustard seeds
- 1 tsp fenugreek seeds
- 1 tsp cumin seeds
- 1 tbsp chili powder
- 1 tbsp coriander powder
- 1/2 tsp turmeric powder
- 1 cup coconut milk
- Salt to taste
Instructions
- Heat the vegetable oil in a large pot over medium heat. Add the onions and sauté until golden brown.
- Add the beef cubes and cook until browned on all sides.
- Add the tomatoes, cinnamon stick, cardamom pods, cloves, curry leaves, mustard seeds, fenugreek seeds, and cumin seeds. Stir well.
- Add the chili powder, coriander powder, turmeric powder, and salt. Mix until the spices are well combined.
- Pour in the coconut milk and bring the curry to a gentle simmer. Cover and cook for 1 hour or until the beef is tender.
- Once the beef is cooked, remove from heat and let it rest for a few minutes before serving.
