Ingredients
- 3 cups cooked rice
- 2 lemons, juiced
- 1/4 cup peanuts
- 2 tablespoons oil
- 1 teaspoon mustard seeds
- 1 teaspoon urad dal (black gram lentils)
- 2-3 green chilies, slit
- 1/4 teaspoon asafoetida (hing)
- 10-12 curry leaves
- Salt to taste
Instructions
- Heat oil in a pan and add the mustard seeds. Once they start to splutter, add the urad dal, peanuts, green chilies, and curry leaves. Sauté until the dal turns golden brown.
- Add asafoetida and mix well. Turn off the heat and allow the mixture to cool for a few minutes.
- In a large mixing bowl, combine the cooked rice, the prepared seasoning mixture, salt, and lemon juice. Gently mix until the rice is well coated with the seasoning.
- Elumichai Sadam is ready to be served. Garnish with additional curry leaves and lemon slices if desired.
