Ingredients

  • 3 cups cooked rice
  • 2 lemons, juiced
  • 2 tbsp oil
  • 1 tsp mustard seeds
  • 1/2 tsp turmeric powder
  • 2-3 green chilies, chopped
  • 1/4 cup peanuts
  • 1/4 cup fresh coriander leaves, chopped
  • Salt to taste

Instructions

  1. Heat oil in a pan and add mustard seeds. Once they start to splutter, add chopped green chilies and peanuts. Sauté until the peanuts turn golden brown.
  2. Add turmeric powder and mix well. Turn off the heat and let the mixture cool for a few minutes.
  3. In a large bowl, mix the cooked rice with the prepared seasoning mixture, lemon juice, and salt. Toss well to combine all the ingredients.
  4. Garnish with freshly chopped coriander leaves before serving.
