Ingredients
- 3 cups cooked rice
- 2 lemons, juiced
- 2 tbsp oil
- 1 tsp mustard seeds
- 1/2 tsp turmeric powder
- 2-3 green chilies, chopped
- 1/4 cup peanuts
- 1/4 cup fresh coriander leaves, chopped
- Salt to taste
Instructions
- Heat oil in a pan and add mustard seeds. Once they start to splutter, add chopped green chilies and peanuts. Sauté until the peanuts turn golden brown.
- Add turmeric powder and mix well. Turn off the heat and let the mixture cool for a few minutes.
- In a large bowl, mix the cooked rice with the prepared seasoning mixture, lemon juice, and salt. Toss well to combine all the ingredients.
- Garnish with freshly chopped coriander leaves before serving.
