Emirati Machbous Rice With Seafood

Ingredients

  • 1 lb mixed seafood (shrimp, fish, calamari)
  • 2 cups basmati rice
  • 2 onions, finely chopped
  • 3 tomatoes, diced
  • 4 cloves garlic, minced
  • 2 green chilies, chopped
  • 3 tbsp machbous spice mix
  • 1/4 cup vegetable oil
  • 4 cups chicken or seafood broth
  • Fresh coriander leaves for garnish
  • Lemon wedges for serving

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the chopped onions and cook until they are soft and translucent.
  2. Add the minced garlic, green chilies, and machbous spice mix to the pot. Stir well to combine and cook for a few minutes until fragrant.
  3. Add the diced tomatoes to the pot and cook until they soften and release their juices.
  4. Add the mixed seafood to the pot and cook for a few minutes until it starts to turn opaque.
  5. Rinse the basmati rice under cold water until the water runs clear. Drain the rice and add it to the pot, stirring to combine with the seafood and spices.
  6. Pour the chicken or seafood broth into the pot and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pot, and let the rice simmer for 20-25 minutes until it is cooked and the liquid is absorbed.
  7. Fluff the rice with a fork and garnish with fresh coriander leaves. Serve the Emirati Machbous Rice with Seafood hot, with lemon wedges on the side.
