Empanadas Chilenas De Carne (chilean-style Beef Empanadas)

Ingredients

  • 1 lb (450g) ground beef
  • 1 onion, finely chopped
  • 1/2 cup (75g) pitted black olives, chopped
  • 1/3 cup (50g) raisins
  • 2 hard-boiled eggs, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste
  • 12 empanada discs (store-bought or homemade)
  • 1 egg, beaten (for egg wash)

Instructions

  1. In a large skillet, cook the ground beef and onions over medium heat until the beef is browned and the onions are soft.
  2. Add the olives, raisins, chopped hard-boiled eggs, cumin, paprika, oregano, salt, and pepper to the skillet. Stir to combine and cook for an additional 5 minutes. Remove from heat and let the filling cool.
  3. Preheat the oven to 375°F (190°C).
  4. Place a spoonful of the beef filling in the center of each empanada disc. Fold the dough over the filling to create a half-moon shape and crimp the edges with a fork to seal.
  5. Place the empanadas on a baking sheet lined with parchment paper. Brush the tops with the beaten egg.
  6. Bake for 20-25 minutes, or until the empanadas are golden brown.
  7. Remove from the oven and let cool for a few minutes before serving.
