Empanadas Colombianas, or Colombian Empanadas, are a popular snack in Colombia. These delicious fried turnovers are filled with a savory mixture of meat, potatoes, and spices, creating a flavorful and satisfying treat.
Ingredients
- 2 cups pre-cooked shredded chicken
- 2 cups cooked and mashed potatoes
- 1 cup chopped onions
- 1/4 cup chopped fresh cilantro
- 2 teaspoons ground cumin
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1/4 teaspoon achiote powder
- 12 pre-made empanada discs
- 1 egg, beaten (for egg wash)
- Vegetable oil (for frying)
Instructions
- In a large bowl, mix the shredded chicken, mashed potatoes, onions, cilantro, cumin, salt, pepper, and achiote powder until well combined.
- Place a spoonful of the filling in the center of each empanada disc.
- Brush the edges of the empanada discs with the beaten egg, then fold the dough over the filling to create a half-moon shape. Press the edges firmly to seal.
- In a large skillet, heat vegetable oil over medium heat. Fry the empanadas in batches until golden brown, about 3-4 minutes per side.
- Remove the empanadas from the oil and place them on a paper towel-lined plate to drain any excess oil.
- Serve the empanadas hot and enjoy!
