Ingredients

  • 2 cups pre-cooked shredded chicken
  • 2 cups cooked and mashed potatoes
  • 1 cup chopped onions
  • 1/4 cup chopped fresh cilantro
  • 2 teaspoons ground cumin
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/4 teaspoon achiote powder
  • 12 pre-made empanada discs
  • 1 egg, beaten (for egg wash)
  • Vegetable oil (for frying)

Instructions

  1. In a large bowl, mix the shredded chicken, mashed potatoes, onions, cilantro, cumin, salt, pepper, and achiote powder until well combined.
  2. Place a spoonful of the filling in the center of each empanada disc.
  3. Brush the edges of the empanada discs with the beaten egg, then fold the dough over the filling to create a half-moon shape. Press the edges firmly to seal.
  4. In a large skillet, heat vegetable oil over medium heat. Fry the empanadas in batches until golden brown, about 3-4 minutes per side.
  5. Remove the empanadas from the oil and place them on a paper towel-lined plate to drain any excess oil.
  6. Serve the empanadas hot and enjoy!
