Empanadas De Carne (uruguayan Beef Empanadas)

Ingredients

  • 1 lb ground beef
  • 1 onion, finely chopped
  • 2 hard-boiled eggs, chopped
  • 1/2 cup green olives, pitted and chopped
  • 1/2 cup raisins
  • 1 tsp paprika
  • 1/2 tsp cumin
  • Salt and pepper to taste
  • 12 empanada discs (store-bought or homemade)

Instructions

  1. In a large skillet, cook the ground beef and onion over medium heat until the beef is browned and the onion is soft. Drain any excess fat.
  2. Stir in the chopped hard-boiled eggs, olives, raisins, paprika, cumin, salt, and pepper. Cook for an additional 5 minutes, then remove from heat and let the filling cool.
  3. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  4. Place a spoonful of the beef filling in the center of each empanada disc. Fold the dough over the filling to create a half-moon shape, then crimp the edges with a fork to seal.
  5. Place the empanadas on the prepared baking sheet and bake for 20-25 minutes, or until golden brown.
  6. Remove from the oven and let the empanadas cool for a few minutes before serving.
