Empanadas de Lomo Saltado (Stir-Fried Beef Empanadas)

Ingredients

  • 1 lb beef sirloin, thinly sliced
  • 1 red onion, sliced
  • 2 tomatoes, sliced
  • 1 yellow chili pepper, thinly sliced
  • 3 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 tablespoon vinegar
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 12 empanada dough discs
  • Oil for frying

Instructions

  1. In a large skillet, stir-fry the beef over high heat until browned. Remove from the skillet and set aside.
  2. In the same skillet, stir-fry the onion, tomatoes, chili pepper, and garlic until the vegetables are tender.
  3. Return the beef to the skillet and add soy sauce, vinegar, cumin, paprika, salt, and pepper. Cook for an additional 2-3 minutes, then remove from heat.
  4. Place a spoonful of the beef mixture onto each empanada dough disc. Fold the dough over the filling and crimp the edges to seal.
  5. Heat oil in a deep skillet and fry the empanadas until golden brown on both sides. Drain on paper towels.
