Empanadas de Lomo Saltado (Stir-Fried Beef Empanadas)
Stir-Fried Beef Empanadas, also known as Empanadas de Lomo Saltado, are a delicious fusion of Peruvian and Chinese cuisines. These savory hand pies are filled with a flavorful stir-fried beef mixture and then fried to golden perfection.
Ingredients
- 1 lb beef sirloin, thinly sliced
- 1 red onion, sliced
- 2 tomatoes, sliced
- 1 yellow chili pepper, thinly sliced
- 3 cloves garlic, minced
- 1 tablespoon soy sauce
- 1 tablespoon vinegar
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 12 empanada dough discs
- Oil for frying
Instructions
- In a large skillet, stir-fry the beef over high heat until browned. Remove from the skillet and set aside.
- In the same skillet, stir-fry the onion, tomatoes, chili pepper, and garlic until the vegetables are tender.
- Return the beef to the skillet and add soy sauce, vinegar, cumin, paprika, salt, and pepper. Cook for an additional 2-3 minutes, then remove from heat.
- Place a spoonful of the beef mixture onto each empanada dough disc. Fold the dough over the filling and crimp the edges to seal.
- Heat oil in a deep skillet and fry the empanadas until golden brown on both sides. Drain on paper towels.
